I have your same problem. 

At this time I tag with:
highway=path
piste:type=nordic
piste:difficulty=*
according with this page:
http://wiki.openstreetmap.org/wiki/Proposed_features/Piste_Maps

On the IRC channel have been told me that path is ok, but I'm not convinced
at all.
As you well say there are a lot of cross country ski tracks visible only in
winter. When the snow melts, there is only grass.
Apparentely the solution could be simple. Use piste:*=* without
highway=path. What do you think about?
