I think the thinking is backward here. It's not that Potlatch makes it too easy for people to unintentionally screw things up, it's that Potlatch is still not easy/complete enough to prevent people from screwing things up and/or allow rollbacks to recover from screw-ups. Like everyone else, I want to throw in a HUGE "Thank You, Richard" for everything that Potlatch has already become. But it still takes a fairly large investment of time and thought to go from a first-time visitor to a useful member of the community. Much of that is not due to the editor, but the tagging scheme. More screw-ups are contributed by Potlatch because it is more visible. I have been fortunate to start as the only contributor for 50 miles around, so there was no one to get annoyed with my screw-ups. Incidentally, I still prefer Potlatch to JOSM most of the time.
