That's an impressive amount of data. I kept thinking what can't I do with
so much data.

Your data not only identifies the road but also the traffic density of the
roads I.e. which roads are used frequently, which are the major roads.

In osm, classifying the roads into different category like primary,
secondary, tertiary, residential etc is also important. This is based on
the traffic density.

There are many ways to convert the traces to roads as others have answered.
I suggest you to find or develop a suitable classification system for the
roads as well.
