Huh, no answers in a week :)

App list depends on the target audience. I'd focus on simpler StreetComplete and Every Door for the general crowd, with forays into Organic Maps and OsmAnd for super casual updates. For advanced mappers, I'd go into Go Map and Vespucci, although that might get too complex quick. Finally, there is ODK Collect, which is used by HOT, but requires some preparation, and not exactly an OSM-related tool.
