Images produced from OSM data prior to the license change must be 
licensed as CC BY-SA 2.0 or later. For ODbL data, see 
https://wiki.osmfoundation.org/wiki/Licence/Licence_and_Legal_FAQ#1.8.2._Books,_magazines_and_printed_maps.

Your book, as a whole, can be whatever license you like.
