No, thats fine. The gps tracks are just for reference. When you create the
road etc. you just use the gps tracks as a tracing guide & don't replicate
every gps point as node, just use enough nodes to follow the path smoothly.

How do I change the tags?


Hmmm, can you be a bit more specific? Usually what you (I) do is upload the
trace as you have done for reference, then in JOSM load up the trace, then
download the map data around that trace (the button directly under the
'File' menu on JOSM, to see whats already been done. If its blank, then you
have the place to yourself & can start creating nodes, links & ways using
JOSM - you only want to add/edit tags on ways.
