[OSM-newbies] Tags and stuff

As a very Newbie I have been following the chat and learning all the
time, also collecting data and inputting a few traces of my own.
However with all this talk about the numerous tags I realise I need more
information.
You talk about unpaved roads, footpaths, bridle (bridal?) paths etc.
where can I find the info on all of the available tags and how you use
them?
