What you want is the properties dialog box, which should be in the right hand dialog panel. If not then Alt+P will bring it up.

When you have selected an object you will see its' tags listed in the properties dialog, and the add / delete / edit buttons allow you to add new tags, edit existing tags, or delete existing tags.

  Adrian - Many thanks for your prompt reply. Having only used the preset process, I do not know how to enter the information you suggest. Please take me through the procedure.
  Thanks!

    > I am in my first week of mapping and have uploaded a GPX file which sets out the boundary of a local Nature Reserve. I cannot find a preset item listed to categorise it, add the name and fill the area with the appropriate colour.

    I use:

    leisure=nature_reserve
    natural=whatever
    name=whatever
