If you select the way and the node (using shift while clicking with  
the mouse to select multiple things) you can then use the "Split Way"  
command in the "Tools" way to split the way later.

Alternatively, if you hold "alt" while creating the new way "segment"  
it will create a whole new way instead of trying to connect to the  
previous one.
