I've not tried it, and it depends how many changes you've made, but
in Potlatch if you select a way and press H you can see a history of
the revisions. This box also offers a "revert" option that I've not
tried, but sounds like it may do what you want.

If they were newly added ways that you want to remove entirely I
think that you select the way and press Shift-Delete (though I
usually have the wiki page with the keyboard hints open in a
separate tab while editing as I can never remember them:
