No, I don't think there's a special tag for racing surfaces.  From the wiki:

Tag:highway=track
Roads for agricultural use, gravel roads in the forest etc.; usually
unpaved/unsealed but may occasionally apply to paved tracks as well.


and from me:  Track fills the space between well-maintained, paved,
through roads and those ways left by occasional passage of animals or
vehicles where there's no road (which probably wouldn't even be mapped
in most cases; highway:path seems to be mostly for more intentional
ways).  In the west in the US, most roads are tracks, simply because
there are so many miles of logging roads, private rural driveways
(which may be 5 miles long), access roads maintained by the forest
service and park service, ranch access roads, etc.  They are an
important link between paved roads and trailheads, fishing spots,
campgrounds, hot springs, hunting areas, logging areas, mines,
beaches, etc.

from the wiki for path:

If a path is wide enough for four-wheel-vehicles, and it is not
legally signposted or otherwise only allowed for pedestrians, cyclists
or horseriders, it is often better tagged as a highway=track.
