Actually there is, but it's not highway=track.

Take a closer look at
<http://wiki.openstreetmap.org/wiki/Key:highway>.  You're right about
highway=track, but there's also highway=raceway, which says "A course
or track for racing".  That particular value doesn't have its own
page, but it's there on the page for the highway key.  When I was
reading that wiki page recently, I must have seen that entry and
mistook it for the entry for track.

I suppose I have several map features to correct now.
