It seems to me that the easiest way to have establishments on her website be marked with special icons would be for her to run her own copy of one of the rendering engines, with a custom icon set.  Of course, once the data is in the OSM database, anyone else making a map of the same area could show the same establishments, although not with the custom icons.  Having location data be available only to the one website would require having a local copy of the database, covering the area of interest, that did not feed updates back to the main OSM database.  I think that would be allowed, as long as proper attribution was given for the OSM-originating data, but I am not a lawyer.
