Unless you know what "map datum" means, use WGS84.

If for any reason you want your GPS to display other datum (for example, to 
compare coordinates against a paper map that uses a national grid), be aware 
that there is software capable of converting the GPS tracklogs later.

This changes the way your GPS unit displays the "north" arrow. Again, changing 
it may be useful if you use paper maps that use the magnetic north, or are 
grid-based.

Otherwise, it doesn't matter much. The default ("True north") means that the 
north arrow points to the geodetic north, i.e. the point with latitude 90º.
