What you ask about sounds like rendering custom map tiles.  You want
to show certain tags, and not others.  That is typically a matter of
rendering.  So as,

Openpistemap.org shows alpine ski trails and lifts
Opencyclemap.org emphasizes bicycle lanes, bike racks and bike repair shops,

you'll want to display perhaps blacksmiths, horse trails and stores
that sell riding apparel.

You have options as to how to start.  A rough familiarity with the OSM
tool chain is probably a good start.  You'll find that interesting
part is making your custom map tiles look the way you want them to
look.  From there, you'll want to give access to those tiles through
your web site.  And you'll probably want to encourage your riding
community to add more data to OSM that you gain the benefit of
improved maps over time.

As for naming, I'd expect you to have free rein.  (see what I did
there!)   You'll certainly want to give proper attribution to OSM for
the data.  There is some guidance on that in the wiki and the archives
on this list.
