Why? Why not help out and improve one of the existing projects?

Well, asking for places that you are familiar with is a bit of a
stretch for me, but if you need to see some mapping in the UK how
about this:

It's something we've been mapping for quite some time now, by hand, in
various countries around the world, and I would expect that to
continue.

I'd echo the other statements about getting some experience by mapping
in OSM, before worrying about bulk imports or writing your own routing
engine from scratch.
