When surveying for OSM, I usually have my Etrex set to record 1 point 
per second. That way, it records as much detail as possible, including 
all of the little wiggles about etc. Though maybe it is a bit excessive 
for walking speeds.

And it does mean it records a lot of points, but most recent Garmins 
have loads of memory for tracks. I think the 62s has an "auto-archive" 
feature, so it saves the current track when it fills up.

If you have don't want to record as many points, then the "Auto" mode on 
"highest"/"most often" detail is pretty good. I find this usually 
records about 1 point per 10 seconds (when walking or cycling). Plus it 
should record more points on the wiggly bits, and less on the straight 
sections, or when you have stopped.
