With git + Markdown I had good results. LaTeX would be more versatile,
but definitely has a learning threshold. For a Markdown example see:

https://github.com/drolbr/overpass-doc

It were even possible to edit files like
https://github.com/drolbr/overpass-doc/blob/master/en/preface/preface.md
in place, and github will translate that to "pull requests".

Please note (Joost knows, but maybe not every reader on this list) that
git is independent of github.
