[OSRM-talk] Install OSRM on MacOs

So I have modified car.lua file : maxspeed_table_default (all values fixed to 50) and maxspeed_table ["fr:urban"] = 10 etc...
I have re-runned `osrm-extract/osrm-partition/osrm-customize/osrm-contract` and it changes nothing. I get the same result.
I must do something wrong...
