[openstreetmap/openstreetmap-website] Change Projection from Mercator to Globe/Sphere (#2604)

- I really don't see why this isn't done, especially since OSM is a human-contributed with various 2D/3D models that need to be accurately mapped out and rendered. I haven't mapped any buildings in the far north or south, but I do know that science bases, shipping lanes/routes and oil rigs exist there.
- Google Maps switched to a sphere in 2018 and Google Earth has always been one.
- I'd suggest changing this for iD as well, but I'd like to get input on it first.
- The only other OSM-related application that even proposed this was [OSMAnd](https://github.com/osmandapp/Osmand/issues/5889)
