Actually, since most vegetarians are technically "ovo lacto vegetarians" you
will find many such restaurants, they're called "vegetarian restaurants" :-)
But you're right that there will be very few restaurants and cafes needing
the distinction between "vegetarian meals that contain dairy but not eggs"
and "vegetarian meals that contain eggs but not dairy".
That's OK, most people can just map places as diet:vegetarian=yes/only. But
they can also use the more specific diets if it is known, and given that it
only adds a few extra things for a data user to check I don't think it's
onerous.
