for example in Germany all footpaths and meadows and fields etc. are legally accessible, regardless of ownership, unless they are fenced off (and provided you don’t damage the crops). Fences are quite rare and typically only used for pastures or places where someone lives.
From what I have learnt through OpenStreetMap and discussions about other countries like the US (trespassing), the UK, the situation in Italy, it seems this is rather an exception than the standard though.
