Thank you for this documentation!
We're talking about the same thing, this tertiary winding can also be used
to feed auxiliaries (i.e cooling vents mainly).
This additional winding can also act as a stabilizer on some particular
configurations (star-star) depicted in your documentation.

There is no "secondary winding at a different voltage (than the main
secondary)". If it's a different voltage, it's a different interface.
