There exists also
https://taginfo.openstreetmap.org/keys/motorcycle%3Atours#values
So outdoor:tours=guided could be fine or in more detail hiking:tours=yes +
canyoning:tours=guided + via_ferrata:tours=guided + ...
They could also rent gear: snow_rackets:rental=yes kayak:rental=yes
Or sell: shop=outdoor

But they are secondary tags. As main tag shop=tourism seems not enough
descriptive, but shop=activity_centre or tourism=activity_centre could be
fine.
