That's because the idea of them, their ideal, is a napkin-sized sketch just about everyone can get their head around. They must be this relatively simple, or they will not be utilized, certainly not utilized to their full potential (or even close).

It seems you're ignoring the past and try to reinvent the wheel.
In particular please take a look at

https://wiki.openstreetmap.org/wiki/Waymarked_Trails
https://cycling.waymarkedtrails.org/

https://waymarkedtrails.org/
(not just for bicyclists)

Among other websites it employs nuts and bolts to reply a concept
in use for mapping since literally decades. It also has useful
features like elevation profile for cycling routes or sections
of it. Even more, you can export GPX or get links to cycling
route operators. It ca highlight a route on the map and zoom
routes to your current viewport of the (slippy) map.

There is also brouter at

https://wiki.openstreetmap.org/wiki/BRouter
http://brouter.de/brouter/

if you want to get routed along the cycling routes present in
OSM-db - the standard trekking profile calculates routes considering
geo-elevation and the cycling routes entered. There are other profiles
you can choose to influence the calculation, even neglecting all
of the bicycle routes in the database.
