Overall, it looks good to me :)

I like that it introduces a clear tagging for the 3 kinds historic,
military use and others - especially the latter is so far only possible
for some structures like building=bunker.

The page contains:

If it is not a wrong wording, could please point me to an example to
clarify what you mean?

Why shall historic=defensive_structure and military=defensive_structure
be mutually exclusive? IMHO a structure may have importance in [younger]
history and still be used by the military for defensive purposes, e.g.
major WWII or cold war structures can offer considerable protection also
against many contemporary weapons.

I'm slightly hesitating to completely deprecate bunker_type=* as it is
popular (see Martins post) and to me - as someone with only superficial
knowledge of bunkers - is seems to be more detailing _the use_ of a
bunker, while defensive_structure=* is more about the architectural
aspects, so both seem to be complementing for most values.
