"Animal hitch" has the advantage that non-native speakers are
reasonably likely to figure out what it is just from the component
words.  "Hitching post" is a set phrase with a meaning that can't be
deduced from its component words (among other things, it's far more
common for a hitching post to be a rail than an actual post).  For
native speakers, it also carries connotations that "animal hitch"
doesn't, such as being only for horses.
