indeed, the maps on the openstreetmap site are updated automatically.
Only if you want to make your own maps you'd need to do it yourself.

Depends a lot on the type of roads of course. If I'm out mapping cycle
routes on my bicycle, for every hour I drive I have to edit about three
hours usually. That's for basic data for a route of about 15km per
hour, i.e. street names, a church or a castle without a name, or a
forest or a pond for example.
Walking will obviously not give as much data in the same time period as
cycling so for one hour walking it's usually one hour editing for me.
