mine :
path : a highway=* too narrow for a vehicle (car, 4x4, emergency
vehicle, ...), generic term when there is no more precise tag
or for shared path (foot+bicycle)
footway is a path with a sign like

I'm using surface=* for paved<>not paved.
I also prefer to use a subtag for the type of urban path (path=sidewalk
path=crossing) much more precise in terms of possible default access
restriction.
