The basic idea for collecting data for OpenStreetMap is covered here:

You'll find that folks collect and check data for OSM on foot, bike or
by vehicle.  Depending on the nature of the data that interests you,
and on the condition of the map in that area, collecting might require
only a paper and pencil, or GPS.
