Why would we remove the tags
waste_disposal:chemical_toilet=yes
waste_disposal:grey_water=yes

I know that your point of view is that these are implicit in the
"sanitary_dump_station" tag, but as others have pointed out, there are
biological dump stations where you can't get rid of your chemicals. Do you
suggest these biological places should get a different main tag? Or that we
only tag waste_disposal:chemical_toilet=no in case they do not accept
chemicals? If it's the latter I am opposing this because "defaults" are
practically impossible to have in an open system like OSM (you never know
if a value should be the default value, or if the data is incomplete).

Regarding grey water I am not sure if tagging makes sense. Does grey water
really need dedicated stations for disposal? In doubt I'd keep the tag.

This can have several reasons:
a) you don't have other kind of stations that do not accept these, so there
doesn't seem need for the tag
b) the tagging is still immature and will be improved later on

In any case it doesn't seem to be an argument for either side.
