At the moment I'm just using designation. However, I will also add permissive footpaths (probably as magenta dashed lines), and highway=track|path and no specific access, the latter will just be black dashed lines as per Landranger.

Mapnik allows you to construct detailed match criteria, so for example you can select all highway=track with no designation tag (to avoid the same data being pulled out twice). When I have time, hopefully the next couple of days I will put up a full description of the method and example Mapnik XML file.
