>From https://taginfo.openstreetmap.org.uk/tags/amenity=post_box#combinations the commonest tags for British postboxes are ref (useful at least for matching the list of postboxes), post_box:type (https://wiki.openstreetmap.org/wiki/Key:post_box:type has a comment complaining about post_box:type=meter without naming an alternative), operator (Royal Mail), royal_cypher and collection_times (the hardest to keep up to date).
