Thanks for the information. I was thinking that tagging could be something
like below but I'm also very open to other ideas. PDO works well except
maybe for the UK. Would a vineyard in the UK be tagged as pdo=PDO?

landuse=vineyard
crop=grape
pdo=American Viticultural Area
pdo:name=Red Mountain

Vineyards in the general area of
https://www.openstreetmap.org/#map=14/46.2820/-119.4480 would contain the
pdo tag.

I should mention that covid made me do this. I joined a wine tasting group.
I'd never heard of these areas before. Now I want to drink all their wine!
The county that Red Mountain is located in has shapefiles with the two PDO
located in their area. Red Mountain is the smaller of the two. Where I'm
located, the PDO extends on both sides of the Puget Sound with a handful of
vineyards scattered around.
