I like your suggestion of using appellation. I even found a web page that
talks about appellations systems[1] around the world. Appellation is a much
better term to use than an acronym like PDO. It's also closely associated
with wines.

Later today, I'll get started on a proposal. Most likely after a couple
glasses of my favorite appellation.
