There is, somewhere, a discussion of how to render single sided road 
features in an OSM Carto-style style, although I can't find the link 
right now.  If anyone wants to volunteer to do this a pull request at 
https://github.com/SomeoneElseOSM/openstreetmap-carto-AJT would be 
welcome.  Without that, it's unlikely to happen, I'm afraid, for exactly 
the reason that you suggest :)
