If you set your device's settings to Irish, then OSM will pick up on that and serve the Irish language names. However, everything in your device will also be Irish. Perhaps setting up a different account on a computer might be more practical. However, it won't work with old_name=* There is a profound problem in Dublin with the Irish text street signs not matching Logainm.

There are currently 78,661 objects on OSM with Irish language names, north and south, but that includes bona fide duplicates, e.g. a road split into a number of ways. 55558 objects have a Logainm reference number. Logainm.ie database has something like 140,000. Wikimedia is much more hit or miss.

There are people who have done work on etymology and old names, e.g. http://www.leabhair.ie/sob/sraidbac/liosta.html I have expanded on that work, but not published it.

Tying OSM, Wiki and Logainm together would be useful.
