How about
chat through http://irc.openstreetmap.org/ calling it "Openstreetmap scotland cake" or similar
direct it through the map page on mapcraft

Generally the two days after the monthly meetings at 8-9pm for about 30 minutes

If you want somewhere for chat, just create a channel on
IRC. There's already channels for osm and osm-gb.
Then suggest a regular day/time to chat there.
Any mapping projects/cakes can be separate from this.
