For large paved areas that are not parking lots or pedestrian zones,
perhaps the best way to tag just the surface? I.e:
area=yes
surface=asphalt
That may not render in any particular way on most maps, but at least we're
not tagging (incorrectly) for the renderer. If it's important for the area
to stand out one can always tag the surrounding areas, like I did for
example at the old S. Weymouth naval air station:

On the other hand, if the area is in decent condition and meant to be
traveled across, tagging it area=yes, highway=service doesn't seem
unreasonable to me.
