There was a similarly themed training course almost two years ago run
by Andy Allan, author of the OpenCycleMap layer. Please see the
notes he wrote up about it in his blog entry:

It, and the associated blog posts, make for enlightening reading
before beginning a similar endeavor, even though OSM tools mentioned
may not be exactly the same.
