This is a thorny question that will vary depending on the details of the
law in each individual state.

"Valid until the next speed limit sign" is nominally true, however a speed
limit may be cancelled out in some cases by a sign that says "end speed
zone" or "end XX limit", which restores the limit to the default in that
jurisdiction. Also, crossing a jurisdictional boundary (city limit, county
line, state line) will in many cases - but not all cases - legally cancel
out a posted speed limit and also restore it to the local default, even if
there is no sign marking the jurisdictional boundary, unless there is
another speed limit sign immediately following the boundary.

The other point I will make here is that only signs that feature black text
on a white background are legal speed limits. Signs that feature black text
on a yellow background are advisory only and are not enforceable limits.
