I've put the stuff I use on the wiki quickly:

It would be cool if anyone else put their solutions up too.

The stuff I'm doing with the laptop is all half written but will be done
by the weekend (it has to be, what with hiring a car to make tracks).
I'll try and put a debian package together with matts sirf driver, as
you just need that to write the GPX files and a couple of scripts to
mail them and run it.

Heres mine briefly:

A cheap old laptop can be used to make tracks. My system is an old dell
with two battery slots which give it a 6 hour battery life, with the
screen off and the hardrive powering down for much of the time. It has a
broken screen and keyboard but is set up with a wifi network card and
USB GPS unit. It records tracks automatically and handles powering off
and and the GPS being unplugged gracefully. Whenever it sees an open
network it emails you the GPX's it has recorded and then backs them up
in case the email fails. A laptop is a little clunky but it has huge
storage capacity. The software used will be detailed soon.

There are a few models of the Sharp Zaurus PDA which run linux by
default. These can be set up like the the Linux laptop above, but have a
smaller memory and shorter battery life unless you plug them in to the
cigarette lighter or something.

have fun,
