I don't have the time to document this yet, but the mapfile against
which the london.freemap demos are running is now available at:

The important documentation on mapfiles is:

Classes hold together multiple style attributes and a label attribute.
there is the ability to render different styles at different levels --
the ways_500 layers are geared towards this. 

There's a *lot* of cartographic improvement that can be done to the
current mapfile -- it's a simple one with a few colors pulled from
osamrender's stylesheet, but it's far from complete. Any improvements
that can be made will be dropped into the OSM mapfile as soon as I get a
chance.

http://paste.lisp.org/display/22209 is a single style for 'motorways'
from the mapfile, to make clear the examples we're working with.
