There are two things I use:
* GETrack - http://www.mobile-j.de/
   Logging at 5/10/20 second intervals, will happily send GPX files of
    your tracks to your machine
* My own nmea_info.py - http://gagravarr.livejournal.com/104793.html
   Logs nmea data at user specified intervals (you can change it on the fly
    from 1 second on up). Also shows you where the satellites are etc
   (It's also GPL'd)
