Ben,

At the moment you need to use one of the off-line editors for adding
additional keys and values to nodes, segments, ways (and areas). The
rendering's using Osmarender all rely upon different keys being used with
various values to style the look and colouring of the output. The Map
Features page is a good place to start for looking at the sorts of keys and
values that might be considered.

This level of functionality is on the to-do list for the online applet, but
it may be a little way off before any of the coders can get to it.
