The Ubuntu, postgis package is either broken or doesnt exist, I cant
remember which.  YOu have to compile from source.  See:

--with-geos=/usr/bin/geos-config --with-proj=/usr  - are essential for Mapnik

I dont have any files called  postgresql-8.1-plruby on my system.
Have you tried #postgis on freenode?  Those guys helped me out loads
when I first configured PostGIS.
