"just know" => The knowledge is embedded in the rules for drawing the 
map according to the presence of particular tags/value pairs as per the 
area icon on the map features page (and a few that aren't listed but 
which people have used - for example, natural=wood and landuse=wood both 
get done as areas in both Mapnik and osmarender even though only 
natural=wood is the "official" one).

So to match the existing maps you'd have to look at their source; but 
for all except these odd cases the Map_features page will tell you.
