You might want to put it under a heavy glass. But then you'll have a very pleasant time getting rid of reflections.

An alternative maybe putting something rigid (like cardboard or metal) behind a single page and keep it vertical (perpendicular to the book). You can make two or three shots of single pages and then properly join them with a photo-editor. 

No easy solution, I'm afraid.

I have an 1909 out-of-copyright book from the library.  It has a 
fold-out map that is bound with the book, so I can't take it out.
How do I hold the map flat to get a good photo?

Note that map longitudes are relative to Ferro.  Subtract exactly 
18° to get Greenwich longitudes.

Note also the dashed lines between Umeå and Vasa, across the Gulf 
of Bothnia, and also across Åland Islands, marking "winter roads", 
i.e. sleigh routes across the ice.
