That's because the text has been converted to lines in the SVG file.

No chance unless you go for the Osmarender route - but this requires you 
to set up the rendering on your machine, and

is not a basis from which you seem to be able to easily achieve this. If 
you post exactly which region you are interested in, then someone might 
make an Osmarender SVG for you.

There is also http://www.flosm.de/ai/index.html but this doesn't cover 
Italy at the moment.

Another option is using the (commercial, expensive) "Avenza Mapublisher" 
plugin for Illustrator which allows you to work from Shape Files. Gives 
you a lot of flexibility but you'll have to do the basic map drawing first.
