My advice is to not use Illustrator if you want to be credible about
open source.
If you are desperate to get something going in ai, try osm2ai from the
OSM SVN (but this only gives you a very basic data set), or use the
proprietary but free-of-charge converter at
http://www.flosm.de/ai/index.html.
AI professionals tend to use the Avenza Mapublisher plug-in which costs
several 1000 $$ and can read shape files. If you have that available I
could generate shape files for you.
A fully open source way to do what you need would probably involve
downloading osmarender (or or/p) from SVN, and running it on an Aarhus
extract to get a proper SVG, then post-process it in Inkscape; an idea
of the process is here:

If you want a large printout of the OpenStreetMap map for Aarhus, in
default Mapnik style, give me your postal address and I'll send you one.
